Rabbits encapsulate hope for Lennie. Rabbits represent what the American dream is for him. 

 On one level this shows how small-minded Lennie is (Lennie Small), but there is a deep sense of pathos as well. Lennie represents 'inarticulate and powerful yearnings of all men'.
